A great location but somewhat disappointing for the price
Pros:

A great location to explore the old city. The reception staff when we checked in were very helpful. It was nice to be able to sit outside the room in the garden, although the chairs would benefit from cushions.

Cons:

The room was very small and very basic. The only toiletries in the bathroom were shampoo and shower gel, no conditioner no lotion. Only one bottle of water was provided. We were not left any milk for the tea/coffee and there were no instructions for the phone so we had to go down to reception ourselves to ask for. The bath was very cheap and wobbly and you couldn't use if as a bath as there was no plug.

Beautiful olde world hotel
Pros:

Beautiful hotel in the heart if the mediaeval city, Beautiful room in the garden area, little table and chairs outside our door, every where spotless clean, the L' Occitan products in the bathroom, coffee machine but no milk, reception said the don't have milk, we had to buy some. Staff polite. Breakfast was lovely plenty of sweet and savoury options, lovely crispy bacon with scrambled eggs, loved that they had plenty of nuts and seeds and dried fruit as well as fresh.

Cons:

The fact they had no milk for coffee, also the sofa bed wasn't made up when we arrived, we are two friends, not a couple . Didn't like the 3 steps up to the bathroom, very dangerous at night, specially coming out as they are right outside the door, we put a white towel there to remind us .

Très moyen
Cons:

C’est très bruyant même en plein nuit. Les chambres sont soit disant insonorisées mais on entend le bruit de la rue comme ci les fenêtres étaient ouvertes !

Wonderful location, quiet, comfortable stay.
Pros:

We chose to stay within the city walls to make the most of the town & were not disappointed: all the activities & restaurants were in our doorstep. To be able to park the car and have our luggage transported to and from the hotel was a treat. The room was comfortable and very quiet, despite being in the middle of the town, due to the double glazing. Breakfasts were ample. We had to ask for milk/ creamers for the tea in the room, but this was easy.

Cons:

Nothing

Pros:

Awesome stay in the heart of Carcassonne
Pros:

Awesome location. Modern facilities available even while within the heart of the old city. We chose a suite, so it was great for my family (3 adults). Our bags were taken to our room for us.

Cons:

Only downside was the gentleman at the front desk did not speak English very well. I know this is France, and I am aware that it is not their first language. I just felt bad they had to bring their manager forward to speak with us for any questions we had. This was literally the only, tinniest, slightly negative thing I could think of. Also, not that this is a negative per se, but there are multiple short flights of stairs within the hotel to go from room to room. Just information in case you have anyone with limited mobility.

Great Location
Pros:

The location of this hotel is fantastic. If you arrive by taxi, they drop you off at the hotels car park, outside the city walls, and they bring you and your luggage up to the hotel by a small electric car. There is a beautiful garden at the hotel, unfortunately it only has uncomfortable metal chairs, so it is not very user friendly if you want to relax in the sun.

Cons:

Generally, the hotel was good, the bed was very comfortable, but breakfast was busy and loud, particularly at the weekend. We didn't like the fact that dogs were allowed in the dinning room, however I think it is pretty standard in France.
Also, the bar was never manned and if they were busy at reception you could not get a drink.
