Very good.
Pros:

Nice room. The castle is very much fun and you can see the slightly faded glory from years gone by. Good position. Good gym.

Cons:

Not too much at the price.

Great experience to stay & dine in a quirky rambling castle with its varied history & lovely gardens
Pros:

The special experiences from staying in a quirky rambling castle with its varied history. Lovely gardens and courtyards with peacocks roaming freely. Elegantly decorated spa.
Food was good and when we had an issue with a poorly cooked dish it was immediately replaced when we complained and we were given a complementary bottle of wine as an apology.

Cons:

We read in the info sheet in our room that we could get a map from reception for a walk around the castle gardens. At reception, we were given, not a map, but a "Short guide to the grounds" consisting of textual description of where to go (starting at the Rose Garden at the back, whereas the receptionist had told us to start at the front entrance), and which contained several errors and also instructions to go to three places (steps down to grave of the Castle Ghost, short tunnel to entrance of Drowning Pit, stairway to Whipping Pit) that were in fact closed to access.

Pros:

Beautiful building and location and friendly reception staff. Room itself was beautiful if a little dated.

Cons:

Stayed in a delux room, but was hardly that, bathroom wasn’t worthy of a two star establishment with mould all down on side, rotten wood, weird mirrors, dirty floor and hardly luxury bathroom products. Coffee and tea facilities without spoons or a tray making it feel unhygienic. Breakfast was in the medieval dining hall which was a bit drab on a glorious morning and selection wasn’t great, particularly if you were a veggie.

A fairy tale stay in a fairy tale castle.
Pros:

The character of this hotel is amazing and the grounds a delight. The breakfast was very good and the staff were ready to help with any rquest.

The rooms are spacious and the beds comfortable. The staff are friendly and helpful.

Cons:

The hotel looks tired: while the rooms are nice, things like doors and skirtings need to be repainted, and the hallways could do with some refreshing and repaint. Likewise, the grounds are overgrown and untidy in some areas.
The breakfast room was very busy, and some of the cooked items had run out, although we had booked our time slot.
We had also pre-booked supper, but when we came to the dining room, the staff had difficulty accommodating a table for 4 people.

Disappointed with our stay
Pros:

The staff were lovely and very hard working. The castle looks very impressive. The area is quaint.
Everything you need is within walking distance.

Cons:

My biggest complaint is that the spa isn't included in the price, the breakfast is an extra £13 each the evening meal came to well over £90 for 3 of us. (That was just main meals and 1 starter, and 1 bottle of wine) It was just too expensive for what you get. It is supposed to be a spa hotel. There was even a comfortable place to sit outside. Just wooden benches.

Steeped in history, and peacocks!
Pros:

Rich in history, the grounds are so interesting to explore! Very comfortable rooms and bed. Good breakfast. Also enjoyed seeing the peacocks wandering around the property.

Cons:

We felt the restaurant was a bit overpriced for the quality of the food on offer. (Tough lamb fillet.)
Also, it’s worth highlighting that there is no elevator, and our room was on the third floor. To be fair, there was the offer of the luggage to be delivered to our room (which we declined), but did see a young female staff member struggling up the stairs with a heavy suitcase, which didn’t feel right.
