Breakfast was great, the room was spacious but dated. The building exterior is beautiful and the interior is very unique.
The bed was horrible, so uncomfortable and stiff we woke up very sore. A bed is a very important part of the hotel experience. Also there are a number of (seemingly) cute restaurants in Pantones but they were all closed even though we stayed Friday-Sunday nights at the end of August (?) There is no where within the village to eat.

The stone building is tucked into the rock landscape in maze fashion with passageways going in different direction and open spaces between. It's easily the most charming accommodation in Spain (castles or monasteries notwithstanding). As you wind your way up the road from the town below you pass by a Roman style aquaduct over the valley and have views above and below. Once in the tiny stone village you can walk through its slate-lined alleys and marval at the old wooden doors, flower pots, hanging vines and the odd cat that lies in the shade. Cars must be parked at the entrance to the village and you walk in, although you can drive your car past the restaurant and unload baggage if you dare negotiate the narrow street to the hotels area. You must send the car registration to the hotel before or on arrival for them to register you. Residence parking is then available to you at the closest spaces to the village. Breakfast is more than ample with all the dishes you'd expect from toast and jam to muesli to fried eggs (although we had our own) to fresh squeezed orange juice, tea and coffee and much more. In the winter you can relax in the lounge in front of the fireplace and in the summer either in a cool stone alcove or at the restaurant steps away. The rooms are fully furnished with A/C, TV, fully stocked bathroom. We had room 2 which is perhaps the nicest although we had three rooms and all we tastefully done and had plenty of space. There's no fridge but you can use the one in the kitchen if you wish. Rachel looks after the hotel and energetically and enthusiastically offers advice, shows you around and prepares breakfast. Language is no problem with her. The rooms also have balconies or terraces where you can sit comfortably on padded chairs or sofas and contemplate life. The view from our terrace was stunning; down the valley to the stone aquaduct, over town as well as up the mountain.
