Exceptional location in historic city center, very comfortable and great value
Pros:

Exceptional location in the heart of the historic city center, just a few minutes walk from the cathedral.
Room 1 has a super contemporary modern bathroom with Florida ceiling, architectural tile, glass, shower, and huge “rainforest@ disk showerhead.
Room furnishings are ample, with big screen TV, locking refrigerator/freezer, locking nightstands, Café table with chairs, armoire.
Ample hot water
Very nice ample hot breakfast served in the courtyard each morning.
The host Anderson is exceptional, as are all of the staff.

Cons:

Rooms don’t have heating and nights are sometimes nippy. Bed has a comforter and a blanket, though.
Free parking is a couple blocks away, and the hotel is on a one lane one-way historic cobblestone street, so stopping in front of the hotel to unload bags is not an option. The buildings in the historic city center are well over 100 years old, so this just comes with the territory, to be honest. A hotel employee drove with us a couple blocks to the parking, and then helped carry our luggage the couple blocks back to the hotel.

Seems more suitable to long-term rather than short stays
Pros:

Easy to find, good location, friendly staff, quiet.

Cons:

First day there was no breakfast as advertised, which sort of threw off my day. Apparently there was some emergency. They worked very hard to make up for it the next day 👍. Though the room was a mini-suite with small kitchenette, there were absolutely no utensils, cookware, plates, bowls, or cups, making it pretty much useless. The mini fridge worked, which I needed, so that was handy.

Estuvo todo excelente. Los dueños muy amables, la ubicación ideal.

Cons:

Mejorar un poco la limpieza, tuvimos que mover un armario porque se cayó una joya y salió polvo y unas basuritas de papel.

Great Place to Stay in Cuenca
Pros:

I really enjoyed staying here for three nights. It is in the heart of Cuenca but when you walk inside it is surprisingly quiet and all the rooms are set back away from the front of the property that faces the street. My room was on the 2nd floor and had a queen size bed and a small kitchen with a sink and nice size fridge. Very clean and quiet with great hot water in the shower. Breakfast was included with eggs cooked to order, cheese, fruit, juice, coffee and bread. I think the owners are husband and wife (not sure due to my poor Spanish) and are very welcoming and friendly. I can highly recommend this place!
