Cons:

Hôtel was described as dog friendly, but we weren’t allowed to use any of the main communal areas. We we’re also not provided with any of the dog friendly amenities offered.
Room had the ugliest view and very loud extractor unit outside.

Pros:

The best thing about this hotel is the location - It is very close to golf courses and the beach and a great set off point for exploring St Andrews in general. What a great town!
On the surface, this hotel seemed great - our room was quite lovely and the public areas of the hotel are appealing. But we had several issues that added up to an overall disappointing stay. The power went out in our room for several hours and no-one knew how to fix it (or seemed to care about the problem). Food in the restaurant was hit and miss and service was very poor at times - one member of staff in particular was just plain rude. We were overcharged on our bill by quite a bit and this took some time to sort out.
As I'm writing this some months after our stay I'm going to give the hotel the benefit of the doubt and assume that these issues have been rectified, hence the four star rating. But perhaps I'm being too generous?

An overall winner for St Andrews
Pros:

Recommend the Steak Tartare and the Sunday roast. All the staff go above and beyond. I am a local and know all the establishments and rate du vin, St Andrews as an overall winner.

This is a nice hotel and very well located in St Andrews.
Pros:

This is a nice and very relaxing hotel, very well located in St Andrews about 5 minutes walk to the Old Golf Course and 10 minute walk to the centre of St Andrews and 10 minutes walk to the castle.

Cons:

Nothing in particular - but for the price, I might have been expected to be surprised a bit more. There were a few little niggles, that you might not expect in an expensive hotel. Room was a bit too hot and the windows did not open very wide. Breakfast was fine but a bit underwhelming.

Buyer Beware
Pros:

"Brimming with character" means a tiny attic room with sloped walls at Hotel Du Vin. The Classic Rooms (our 2 were definitely NOT pictured on website) were also hot and stuffy, requiring you to keep the tiny dormer window open all night. It was hard to sleep with the noise the birds made. For $630 per night, this hotel fell well below expectations. One of our rooms had a double bed, not the promised "sumptuous king" or twin. Not worth the money! That said, staff were warm and the common spaces are well appointed.
