L'accueil et le professionnalise de l'ensemble du personnel.
Le petit déjeuner a la carte est excellent ,bien entendu,nous avons été comblés par la qualité et l’inventivité des diners,que ce soit au Bistrot ou a la Table Saint Jacques.
L'infrastructure dans son ensemble est tout bonnement exceptionnelle !
Petit bémol : l'air conditionné a mi-puissance est assez bruyante ,cela a légèrement perturbé le sommeil de ma compagne.
Par ailleurs, la pelouse coté piscine n’était pas correctement tondue, elle était couverte de touffes d'herbe, que nous ramenions a l' intérieure ,apparemment la tonte réalisée par un robot n'est pas top !

One staff member on check in was rude. Service in the restaurant was mainly ok. Hotel a little dated. No fridge in the room.
Plus que parfait. Vraiment exceptionnel ! La vue est magnifique ! Les restaurants gastronomiques sont excellents et le spa est superbe. Le personnel est aux petits soins. Par-contre il faut prévoir un bon budget !

la chambre et son balcon (sauf absence de mini frigo !), le dîner, le petit-déjeuner
l'absence d'un mini frigo dans la chambre (et je ne parle pas d'un mini bar mais d'un réfrigérateur) . Déjà signalé lors de notre précédent séjour (et contrairement à d'autres années précédentes). assez scandaleux pour un hôtel 5* (et à ce prix) et en plus en temps de canicule. Nous venons toujours en moto et pouvoir conserver un peu d'eau fraîche et un plus! Nous y réfléchirons à 2 fois désormais.
Excellent, nous avons passé un magnifique séjour dans votre établissement.

A special thank you to Christoph, who turned our stay around. He noticed that our experience had not started as well as it should have and went above and beyond to make us feel genuinely welcome. His professionalism, attention to detail, and sincere care for our comfort were exceptional. He regularly checked that everything was perfect and truly embodied five-star hospitality.
We also had dinner at the bistro on our second evening, and it was outstanding. The food was excellent, the atmosphere was relaxed, and it was exactly the dining experience we had been hoping for. It is just a pity that we didn’t have this experience from the very beginning, for reasons explained below.
Overall, we had a wonderful stay and were extremely impressed with the hotel, its facilities, and the exceptional quality of service provided by almost all of the staff.
However, before our arrival, we tried to contact the hotel three times through Booking.com but never received a reply to any of our messages.
We gave 3 stars for the staff only because of one receptionist (her name was something like Amel). While she technically presented alternatives when we explained that we did not wish to dine in the Michelin-starred restaurant, the options offered were not comparable to the experience one would reasonably expect at a five-star hotel after a long journey. More importantly, the manner in which the conversation was handled made us feel unwelcome, uncomfortable, and under pressure to dine at the hotel’s restaurant. This interaction stood in stark contrast to the warmth and professionalism shown by every other member of the team and was the only disappointing aspect of an otherwise outstanding stay.

Great location - our suite was on the first floor with stunning views, overlooking River Yonne. The room and bathroom were excellent - a great harmony of modern and traditional. Each space in the hotel was done up beautifully, reflecting the heritage of the hotel. We were welcomed warmly by the front desk team, the check-in was efficient and quick, and we were escorted to our room. The property has an excellent Michelin restaurant with the owner as the Chef - we had a great dinner.
The breakfast was exceptional, the service exemplary. Will recommend the hotel strongly as a base to explore Chablis and North Burgundy.

Les équipements sauna, hammam, massages, piscine, sont exceptionnels, bien organisé, la chambre était très bien et le personnel, aux petits soins.
Il y a juste un petit souci d'isolation phonique des chambres
Always good. Despite Jean-Michel Lorrain and his wife, Karine, having stepped back (a bit) they are still visible in the hotel. The food is always good. The rooms are comfortable. The situation of the hotel on the banks of the Yonne is beautiful.
