If you’ve ever wanted to make your own chocolate or learn all the wonderful intricacies and processes involved in making the world’s favourite treat, this is the class for you!

In 2 hours you will travel through time: from the history of the tree, to the myths, to the very real and important part cacao and chocolate played in the cultures of Mesoamérica. And of course you’ll also be making chocolate. From trying the raw fruit (when available), to roasting, grinding and separating the shell from the nibs you’ll be working just like a professional making award winning chocolate. You’ll learn some of the amazing medicinal uses of chocolate before making your own chocolate ‘medicine’ to take home. Finally, you’ll temper freshly poured molten chocolate and you’ll make your own bar to wrap and enjoy later.

There are chocolate tours all over the world, but this is a real hands on experience - you will get chocolate on you!

Guests are invited to try cacao and chocolate in the class. We always hope to have fresh cacao fruit to try (when in season), we also try fermented dried and roasted beans and of course chocolate!
We’ll make a refreshing medicinal cacao tea drink. Water will also be available.

We are Cacao Huasi, in downtown Puerto Viejo. You can find us on google maps as Cacao Huasi. We are on the beach, avenida 73, very close to the bus stop.

What to expect

Chocolate doesn't begin as a bar. It begins as the fruit of a tropical tree.

Step inside our working bean-to-bar chocolate house in Puerto Viejo and discover how locally grown Caribbean cacao becomes exceptional chocolate. You'll make your own chocolate from cacao beans using the same small-batch methods we use every day.

Unlike plantation tours or demonstrations, this is a fully hands-on experience. Every participant completes every stage of the chocolate-making process, from bean to finished bar.

Your experience begins beside living cacao trees, where you'll discover how this remarkable tropical fruit grows, what shapes its flavour, and why it has fascinated people for thousands of years. Then you'll step into our workshop to roast, crack, winnow, grind, refine, temper and mould your own chocolate while learning how each step transforms flavour, texture and aroma.

Along the way, you'll taste cacao in different forms, ask as many questions as you like, and discover why chocolate is the record of everything that happened to the fruit before it became a bar.

You'll leave with a chocolate bar you've made yourself—and, we hope, a completely different way of looking at chocolate.
