This one is different: a full progressive dinner across four stops in Barcelona's Gothic Quarter and El Born, with a seat and real time at every one. Start with a vermouth ritual dating to 1967, move to a cheese tasting through four textures from small Catalan producers, then into a natural wine bar where the pours come with real stories attached.     Step into a family-run bodega tucked just off the Gothic Quarter for la hora del vermut, the Catalan vermouth hour. Sip house vermut on tap from Tarragona, served over ice with lemon, alongside house-salted anchovies, a gilda, and ensaladilla rusa.
