Together, we will explore Piedmontese culinary traditions through a Tuscan perspective, combining the techniques and flavors of two of Italy’s most renowned gastronomic regions.
We will prepare traditional tajarin, ravioli del plin, and authentic Tuscan pici, following the original recipes. You will learn how to make two different types of fresh pasta dough: an egg-based dough for the Piedmontese pasta and an egg-free dough for the pici.
Each preparation will introduce you to specific traditional techniques, from the delicate “plin” used to shape the ravioli to the hand-rolling technique used to make pici.
The cooking class will also include a tasting of a selection of local wines.
