Together, we will explore Piedmontese culinary traditions through a Tuscan perspective, combining the techniques and flavors of two of Italy’s most renowned gastronomic regions.
We will prepare traditional tajarin, ravioli del plin, and authentic Tuscan pici, following the original recipes. You will learn how to make two different types of fresh pasta dough: an egg-based dough for the Piedmontese pasta and an egg-free dough for the pici.
Each preparation will introduce you to specific traditional techniques, from the delicate “plin” used to shape the ravioli to the hand-rolling technique used to make pici.
The cooking class will also include a tasting of a selection of local wines.

Surrounded by vineyards, the scent of wild herbs, and the slow pace of the countryside, I offer authentic Piedmontese cooking classes, enriched with Tuscan influences that reflect my personal history.

I am a professional chef born in Tuscany, with a deep passion for both the cuisine and traditions of Piedmont. In my courses, I teach how to prepare fresh pasta the traditional way: tajarin, ravioli del plin, potato gnocchi, and other local recipes, always accompanied by seasonal sauces, local ingredients, and occasional nods to my homeland.

This experience is designed for those who love to get their hands into dough, learn the secrets of regional cuisine, and enjoy a genuine meal in good company, all with a view of the UNESCO-listed hills.

The classes take place in the kitchen of my B&B, creating a warm, informal, and family-friendly atmosphere. Whether you're a cooking enthusiast, a curious traveler, or simply looking for an authentic experience, you'll be most welcome.
