What to expect

Step into the culinary world of Chef Héctor Palacios, one of Baja California Sur's most celebrated chefs, for a two-hour signature oyster experience at Casamarte Oyster Bar & Grill in downtown La Paz.
You'll be picked up at your hotel and taken to the venue, where you'll be welcomed with a signature cocktail. Your bilingual host will guide you through the story of the Baja oyster — its origin in the Gulf of California, the local farms that produce it, and the chef's work with sustainable fishing communities.
You'll watch a live shucking demonstration and learn the proper technique, then participate in a guided sensory tasting where you'll identify flavors, textures, and natural pairings. The experience closes with a five-course signature menu, each dish a different expression of the oyster: ceviche, sope, taco, grilled, and a delicate panacotta with oyster scallop. Round-trip hotel transfer included.
