We will meet at JR Musashi-Sakai Station at 10:00 AM. Look for a tall, glasses-wearing guide in front of the NEW DAYS convenience store outside the station's central ticket gate. From there, we’ll drive you to our home kitchen. The drive takes about 20 minutes.

What to expect

This private, artist-led plant-based sushi experience takes place in our home kitchen and studio. Using seasonal vegetables and traditional Japanese tools, you will learn to make several styles of sushi, each prepared with house-made seasonings and fermented ingredients.
The menu includes:

Nigiri — grilled bell pepper with koji soy sauce; blanched okra with miso sauce
Hosomaki — cucumber
Inarizushi — seasoned aburaage with sushi rice, pickled ginger, and simmered shiitake
Gunkan — corn with vegan mayo and miso; okra, natto, and yamaimo with soy sauce
Chirashi-zushi — carrot, burdock, shiitake, lotus root, kabocha, and vegan ikura
Futomaki — made by Rei as a gift, filled with seasonal vegetables

The class begins with the history of sushi, followed by hands-on instruction in sushi rice and traditional tools, including Japanese kitchen knives.
Please note: All sushi is 100% plant-based. The kitchen and tools are not exclusively vegan but are cleaned before use.
