This class is led by Oswaldo, a Oaxacan chef who trained deeply in his region's traditional cooking and even wrote a book about Oaxacan bread. You won't just watch from the sidelines you'll make the mole yourself, make tortillas on the comal, put together memelas and tamales, and along the way we'll talk about why each ingredient and technique matters. At the end, we share the food, drinks, and you take the recipes home with you.

What to expect

You'll be welcomed into the workshop and get an introduction to the ingredients you'll be working with masa, chiles, spices, and the staples of Oaxacan cooking. From there, you'll start with the chocolate tamales, learning how to prepare and wrap them the traditional way. Next comes the mole estofado, made from scratch, followed by a hands-on salsa made in the molcajete. You'll then move on to making tortillas and cooking them on the comal, along with fresh memelas. Once everything is ready, you'll sit down together to enjoy the meal you just prepared, alongside chef Oswaldo. Since you'll be tasting throughout the class and sharing a full meal at the end, we recommend coming with an appetite and not eating a heavy meal beforehand.
