What to expect

Welcome to the world of authentic Japanese soba craftsmanship in the heart of Ginza, Tokyo. In this intimate 120-minute workshop, a soba master from Meijitei — a soba house that has preserved its tradition unbroken for 137 years — guides you through the entire soba-making process. You will mix buckwheat flour, knead the dough, roll it with a traditional wooden rolling pin, and cut it into noodles with a traditional soba knife. The master reads the season, the humidity, and the condition of the dough, and will teach you to do the same. Once your hand-cut noodles are ready, they are boiled on the spot and served with our house-made dashi broth, prepared from hand-shaved bonito flakes and soy sauce aged over several days. This workshop delivers a story you will tell for years to come.
