Soba Noodle Making with a Master from a 136-Year-Old Soba House

In this intimate 120-minute workshop, a soba master from Meijitei — a soba house that has preserved its tradition unbroken for 136 years since its founding in 1889 — personally guides you through the entire soba-making process. You will experience every step: mixing buckwheat flour, kneading the dough, rolling it with a traditional wooden rolling pin, and cutting it into uniform noodles with a massive soba knife. You will experience firsthand the techniques that have been passed down for 136 years. The master reads the season, the humidity, and the condition of the dough by feel, adjusting the balance of water and flour — and teaches you to do the same. Once your hand-cut noodles are ready, they are boiled on the spot and served with our house-made dashi broth, prepared from hand-shaved bonito flakes and soy sauce aged over several days.
