Here, you're not just making pasta you're stepping back in time, immersed in centuries of Italian history and culinary tradition. Led by Sarah, a fresh pasta expert with over 5,000 satisfied clients, this 2-hour experience guides you through making traditional pappardelle entirely by hand, just like Italian grandmothers have done for generations. Delight in tasting your creations, paired with two glasses of prosecco and wine. Families are welcomed, and kids can get creative with dinosaur-shaped cookie cutters. The fortress setting, overlooking a tranquil canal, adds to the authentic and timeless Italian atmosphere.

Get inside La Fortezza Nuova and the class takes place in the restaurant on the left side. Enter and you'll find me there. Most of the time I will be waiting outside for you.
What to expect
In this 2-hours class, learn to make traditional pappardelle entirely by hand, no machines, just the old-fashioned way, exactly as Italian grandmothers have done for generations.
Enjoy a tasting of your homemade pasta, along with 2 glasses of Prosecco, 2 glasses of wine and a limoncello. The pasta is served with a classic tomato and basil sauce, prepared prepared fresh from the local market every morning.
Perfect for everyone, families with young children are very welcome. Kids will love using fun dinosaur-shaped cookie cutters to create their own pasta.
The class takes place inside La Fortezza Nuova, a stunning 16th-century Renaissance fortress right in the heart of Livorno's most picturesque neighborhood. You'll enjoy the experience within the historic walls of the fortress itself, the most authentic setting.
