Living Cantina: Tradition, Flavor & Joy. Taste tequila, mezcal, and raicilla, craft your own cocktails and dishes with Chef Rodrigo Villar and Isabel Cenil Madero. With music, games, and cantina stories, you’ll enjoy an authentic experience blending tradition and haute cuisine.

This experience is a 6‑course tasting dinner. The sample menu of 10 dishes represents the variety of options available, but each session includes 6 different courses that change depending on the day and the chef’s inspiration.

This activity is born from 17 years of experience at Layla’s Restaurante, a well‑known name in Puerto Vallarta, and takes place at Casa Madero, designed as an authentic Mexican cantina. Over three hours you’ll enjoy a guided tasting of tequila, mezcal, and raicilla, learn to craft your own cocktails, and join cooking lessons with Chef Rodrigo Villar and Isabel Cenil Madero, co‑founder of Layla’s and host of the tour. Between each drink you’ll discover flavors that blend tradition and haute cuisine: from shrimp broth and paella to signature creations like coffee‑BBQ ribs, chicken in habanero sauce, or shrimp in white mole.
More than a fixed menu, it’s a tribute to Mexican cuisine, recognized as World Heritage, and to the spirit of cantinas: places where presidents, artists, and workers sat side by side, sharing stories, music, and games. Here you’ll relive that essence with lottery, domino, and rayuela, Mexican music, and captivating tales of legendary cantinas.
