Skip a generic cooking class in Chengdu for a shared, small-group lesson in two Zigong snacks: cold noodles and wolf-teeth potatoes. At a local home, learn to prepare the dishes using the cooking methods and flavors passed down from the host’s mother, who ran a food stall selling them for years. You’ll work with the ingredients and equipment provided, make chili oil from a home recipe, and cook under instruction before tasting what you made. The host also explains characteristics of Sichuan and Zigong cuisine, along with the personal connection behind the food: a childhood in Zigong, where the host’s parents worked in the salt factory and the family cooked with local well salt and chili. The shared experience is capped at six travelers, and the spice level can be adjusted if you can’t eat spicy food.
