This tour starts at the steps of the cathedral where the city was founded, then walks straight into that layered history through 6 tastings you won't find on a typical itinerary. Bite into a towering mortadella sandwich stacked with peppery cured meat, a working class classic paired with a soda made from a native Amazonian fruit. Follow it with a soft egg bun filled with rich custard, then glossy Korean fried chicken glazed to stay crisp.
