In this program, you will learn how to prepare Japanese plum wine and bitters (six Japanese essences) while experiencing traditional Japanese fermentation culture. The setting for this experience is the world-renowned "The Japanese Bitters" distillery—a 50-year-old Japanese traditional house. Here, you will try and make bitters using carefully selected Japanese ingredients, and prepare plum wine.
As a special experience, you will also try creative sushi pairings that go perfectly with plum wine and bitters. Under the guidance of sushi chef Kubo, who is active both domestically and internationally, you will learn traditional sushi techniques and experience a wide variety of variations, such as modern and creative sushi arrangements and seared sushi.

In our production facility, craft your own Japanese Bitters using select botanicals. Bottle it to take home! Then, learn to make Umeshu, choosing plums and sugar to your taste.
Experience the fusion of traditional Umeshu-making and innovative craft bitters. Learn from experts, create your own liqueurs, and savor the taste of Japan!
