What to expect

This private, artist-led sushi experience takes place in our home kitchen and studio. Using seasonal seafood and traditional Japanese tools, you will learn to make several styles of sushi.
The menu includes:
Nigiri (4 pieces) — seasonal selections from salmon, scallop, sea bream, and tuna (medium-fatty, lean, or premium fatty cut depending on the day's catch)
Hosomaki — cucumber
Inarizushi — seasoned aburaage with sushi rice, pickled ginger, and simmered shiitake
Gunkan (2 pieces) — ikura (salmon roe); squid with shiso leaf
Chirashi-zushi — a generous arrangement of all seafood used in the class
Futomaki — made by Rei as a gift, filled with seasonal ingredients
The class includes a tasting of six varieties of soy sauce and is served with freshly grated natural wasabi.
A soup made with house-made miso or koji is also included.
The class begins with the history of sushi, followed by hands-on instruction in sushi rice and traditional tools, including Japanese kitchen knives.
Extended and customized formats are available. Please contact us before booking.
Your hosts: Rei, a professional sushi chef, and Chie, a former nerikiri instructor and artist rooted in traditional Japanese craft.
