Massive bedroom. Evening meal was excellent. Opportunity to spend the night in a historic fort was fabulous.

Loved the superbly appointed rooms and the quiet location looking out to sea plus the delicious breakfasts. The half board option was great.
Staff weren’t friendly and made me feel like an inconvenience at breakfast time and it was a long way to walk to the entrance on foot from the road.
Ridiculous in the hot weather not to have the swimming pool open for guests!

I recently stayed at the Parador de Baiona as part of a tour across Spain. Having stayed at several other parador properties earlier in the trip, I arrived with a good understanding of the chain and what to expect.
The setting is simply spectacular. The hotel occupies a unique location within the historic fortress overlooking the Atlantic Ocean in Baiona. The parador chain has done an excellent job integrating a modern hotel into the old crenellated castle walls. The newer portions of the building utilize traditional architecture and period-inspired decor that complement the genuinely old fortress.
Overall, I would describe the hotel as a very solid 4-star property.
One thing I appreciated was that, unlike some other parador hotels, there was a bellman/porter available upon arrival to assist with luggage. Curiously, however, there was no bellman/porter available when it came time to check out and leave.
Check-in was efficient, but there was no welcome letter or guest information provided. This felt like a missed opportunity. A welcome letter can be useful for explaining hotel amenities, dining options, services, and local attractions. In fact, I found it somewhat odd that there was virtually no information available anywhere about either the hotel or Baiona itself.
My room was clean, comfortable, and well maintained. However, as with other parador properties I visited, some amenities that many travelers would expect were absent. Most notably, there were no bathrobes or slippers. The minibar was stocked with water and soft drinks but contained no wine. I also noticed there was no stationery or postcard in the room. I would have enjoyed sending a postcard home. When I asked at the front desk whether postcards were available, I was told they did not have any postcards.
Dinner and breakfast are served in the same dining room. The quality of the evening meal was excellent, and the service was impeccable. Unfortunately, the atmosphere did not match the quality of the food. The room still felt very much like the breakfast buffet area with cereals and other breakfast items remaining visible. It lacks the sense of occasion one expects from such a historic property. This is especially puzzling because the hotel has an attractive lobby bar in a separate space with outdoor seating. That area feels far more suitable for a memorable dining experience.
Breakfast was very good. The buffet offered a strong selection from the buffet with an option for eggs cooked to order. There was even self-service cava sparkling wine available.
Would I return? Absolutely. The location alone makes the Parador de Baiona worth visiting. The hotel delivers a comfortable and enjoyable stay. As it stands, I consider it a strong 4-star property. With a handful of relatively minor improvements, however, it could and should be a genuine 5-star experience.
