This should have been a five star review...
Pros:

This should have been a five star review as this hotel is a gem. Beautiful architecture and furniture, tasteful art and decorative touches, immaculate landscaping and lovely open spaces. Our room was well appointed and comfortable, and very quiet – slept like a baby.
However, their restaurant is a disaster. Overly long and complicated menu, many dishes, many ingredients. Was May, not high season, so only two other couples dined that evening. I wanted a simple garden salad to start, which they could not do (a first for a French restaurant) so I skipped the first course in anticipation of my 330 g côte de veau. My wife had the tuna tartare, while the fish was fresh the flavor was completely lost to other ingredients, tasted raspberry sauce more. For her main she had the seafood pasta, which came out as a dark unidentifiable sludge over noodles, vague unpleasant fishy flavor. It was like they mashed and boiled a week of leftovers. She could not finish it. And my veal came out not au pointe but overcooked gray, dry, and clearly much smaller than advertised – I know what 3/4 pound of steak looks like. My guess is this was the old stinky piece of veal that needed to either be thrown away or cooked thoroughly, and the chef guessed that the American would not notice the difference. Very wrong, I sent it back and given their three strikes, just had bread and wine.
The problem is entirely self-inflicted – the menu is too complex to keep fresh ingredients and prepare properly for so few guests outside of peak season. Fire the chef – there is no way a competent professional did not know what he/she put on that plate for me was dreck. And simplify the menu, fewer and fresher ingredients, focus on flavor vs showing off – and I would happily pay same price for the ambience. But their lack of ability or interest to serve a decent meal ruined our evening. Nearby, Cigale serves delicious traditional Corsican fare - La Dimora would do well to emulate. But I cannot recommend this hotel.

Excellent quiet get away
Pros:

Lovely quiet hotel nestled in a quiet neighborhood near St Florent. Beautiful room with terrace near then pool. Pool was nicely landscaped and comfortable for lounging at the end of the day. Staff were very helpful with restaurant and sight seeing suggestions and very pleasant with all our requests.
The restaurant for dinner was okay. Had better meals in St Florent and Cap Corse. Breakfast was good with fresh items.

Peaceful, lovely, boutique hotel
Pros:

Returned after a 7 year absence to find it reassuringly the same. Lovely room with small terrace - in fact the same one we stayed in last time. Very helpful & friendly staff.

It's extremely quiet & peaceful & the pool area is lovely. Dinner very good. We won't hesitate to return again.

Luxurieus kleinschalig hotel met grote tuin. Goede bar en restaurant. Een minpuntje: de waterval aan het zwembad is nogal luidruchtig.

Gem in the hills of Oletta
Pros:

A must stay that transports you away, yet is still an easy 15-20 min drive to Saint Florent. Of all the places we stayed in Corsica, this was the one I was most excited about and it did not disappoint. From gorgeous rooms, to an amazing pool, fantastic restaurant and even better service. The pictures don't do it justice.

Not a relaxing stay
Pros:

- This is a small, boutique hotel and on the whole looking at the reviews people seem to like staying here for a couple of days. Unfortunately we booked it for 10 nights to explore the North of Corsica and it was too long. For us the hotel was not what it seemed on the website. We booked in early June hoping to have a quiet, peaceful stay, avoiding school holidays. Alas what we hadn’t realised is the hotel encourages families at the weekend (including their dogs) and so half our stay was dominated by children jumping in the pool, shouting, using the small hot tub, inflatables and toys everywhere. This completely ruined the stay for us. The hotel did not manage this situation so it was a free for all. (In high season children would be there all the time)
- The hotel whilst beautiful and well maintained is in a rural location, you cannot walk anywhere from it as the bendy roads are too dangerous for walkers so you are 100% reliant on a car. The grounds are also limited. Taxis are few and far between and very expensive - they need to be booked in advance as whilst there is a rank in St Florent there are never any taxis there. A round trip into Saint Florent and back to the hotel in the evening is 60€
If you are looking for a good beach - the local beach in Saint Florent is ok (15 mins drive) but not the clear turquoise waters you associate with Corsica and surrounded by campers. The nearest decent beach is 50 mins drive in Ill-Rousse on very bendy roads with gorgeous views and a fantastic beach, white sands and blue azure clear sea.
- The hotel food is very expensive and overrated. We have eaten in some fabulous restaurants / hotels around the world but this food was over complicated and flavours just didn’t work. The blackboard menu is the same for lunch and dinner, and didn’t change much in 10 days, there is a very limited choice for lunch/pool area out of high season, just a couple of options but nothing light & snacky, still quite rich and complicated Fayre) so we ended up going out for lunch each day to nearby Oletta or Saint Florent. (And for dinner after a few of days trying the hotel)
- Breakfast at the hotel is not included and for 10 nights this added €500 to our bill.
The self-service breakfast is in a pretty courtyard, the buffet is ok but a bit limited and cramped. On a few occasions I asked if it was possible to have a few slices of tomato which they did for me, only to find a charge of 1€ on our bill on top of the breakfast charge.
- On a positive note the staff are very helpful, we loved Sonia, she was a delight. The hotel is beautifully restored and maintained
- We did complain to the owner and she did take money off our breakfast bill, however this was not about the money, it was about the fact that our stay was not peaceful, tranquil and blissful as we had hoped. It was stressful and noisy, such a shame.

Parel van hotel
Pros:

Pareltje van een hotel. Kamer, entree en lounge zeer smaakvol ingericht. Comfortabel zwembadmeubilair. Vriendelijke mensen.

Rustic Retreat
Pros:

The hotel is tucked away on the outskirts of Oletta, at the end of narrow and winding local roads. You arrive by a tree-lined driveway leading to an unassuming stone building with an extensive car park at the front.

The reception area was quite small and to access our room we headed outside through another door.

Our Charme (Basic) Room looked rather eclectic : the furniture was comprised of a large traditional wooden wardrobe accompanied by a modern armchair upholstered in red leather and a small red metal table. There was an opaque plastic chair by the desk.

The room was bright and airy.

Other than the wardrobe there weren’t any drawers or additional storage space. Side lights were rather fiddly so we ended up not using them.

Bathrobes and slippers were provided. There was a safety box too. There were no tea or coffee-making facilities, at least not in our room.

The bathroom was really lovely, very spacious, with a corner bath tub and interesting tile design.

We dined at the Pera Bianca restaurant with tables laid out in beautiful surroundings by the pool. The food was great and wines on offer were primarily Corsican, a common theme on our journey around the island.

Breakfast was a bit of a disappointment, especially considering the rather steep price (€24.50 per person): not much choice available and little fruit too.

Staff were really friendly and helpful.

Overall we really liked the hotel.
