Great wee find.
Pros:

We stayed here en route to Scotland, it is literally on the A1, but perfect as a stop point. The hotel itself is a little tired, but thats made up for by the lovely welcome and staff, the food was delicious and the lounge area was so comfortable. Our room Room 5 was large looking on to the back of the main building with a newly decorated bathroom and had everything you would need. There is a lovely feel to the hotel and would definitely recommend it Thanks Sibson Hotel

All in all it was great value for money albeit some things could have perhaps been a wee bit better

Tired hotel, but room was comfortable and had everything needed.
Pros:

Room, although tired, had everything needed. Lighting was a little poor, but the shower/bath had excellent hot water.
And the view from the window was lovely.
The staff were helpful. The Bar was attractive and comfortable.

Cons:

The breakfast was basic at best, poor coffee, and no yoghurts for instance. Dinner was reasonable pub food.

If I am due to visit Peterborough again I would happily revisit the Sibson Inn.
Pros:

There is ample parking. Check in was quick and efficient. Room was clean and tidy and despite being on the side closest to the road, it was surprisingly quiet. The hotel is close to the Show Ground and the route in was easy and quick. I would recommend staying here if you are exhibiting or just visiting an event as it was so convenient.

Cons:

The room was very hot, which was not surprisng as my stay coincided with a very hot day. I was able to find a fan in the corridor which was not in use and this made a little difference. This is no fault of the hotel and would likely have been the same in many other establishments. There was no one in reception at check out and it turned out I could have just left the key but that was not clear at the time.
I didn't use the bar or restaurant although both looked busy. I expect they are usually busy as the location of the hotel means there are few alternative options in the immediate vicinity.

Historic, beautiful location for any occasion.
Pros:

The beautiful historic Inn was perfect for our short stay. The staff were really lovely and made us feel relaxed and welcome.

Pros:

The room was fairly comfortable. Parking was easy

Cons:

The outside courtyard could have been really pretty, BUT all the hanging baskets and plants were dead and the furniture needs an upgrade. one chair was broken and would be dangerous if someone sat on it.

The evening meal was passable (just)

Pros:

Initial welcome fine . Meal fine that evening and breakfast okay

Cons:

Fan in bedroom because of extreme heat. Gravel all around a real problem coming into building . Toilets in main hotel out of action both visits near bar. On return journey asked for a sandwich was told hotel shut until 6pm. There was a function there in another part of the hotel which was very noisy until midnight. Cigarette butts Ashtray full outside our room on a table same the week before

Terrible, upsetting, tiring and I feel everyone should no this, could have been avoided if told.

the hotel is very tired, needs updating, no attention to detail outside plant pots falling apart. entrances to the hotel room not good, very tired, furniture could be recycled with fresh paint which would make a big difference. outside area tables had ashtrays full of cigarette butts. just no care taken with it, we didn't see another guest there and I can I see why. The position of the hotel is not ideal it right on the A1 which is a busy road, nightmare trying to get out onto the A1.
also it was advertised as a restaurant, we asked for lunch and they dont do lunch. they offered a sandwich the first time if we wanted. so we went back for a sandwich to be told no we couldn't because they were painting in the kitchen . my partner needed to eat as he was working from 6pm up the road which is why we chose this hotel as it was close, also because its had a restaurant . we had to go out and find somewhere to eat which was inconvenient for us.

the worst is yet to come !!

My partner went off to work while I stayed at hotel. to find once he had finished his gig, to come back to hotel which is less than ten minutes away. To find the A1 was closed going North to get to Hotel, there is no other way of getting into hotel. he had to sleep in his van all night until 5pm in the morning when I could here the traffic and I called him to come back to hotel as he could get in now as they had opened A1.

what my biggest gripe was we were not told by the staff that this was happening that night , or by Booking .com when we booked hotel a few days before, I also think you are to blame. surely you should know these things.
I spoke with the staff in the morning, they knew about this, but did not advise us about it and how we could have got back into hotel that night. apparently there was a support vehicle that could have guided him into hotel. no one was at the junction to advise. I went out and there was an intercom that I could call for assistance but no one answered .
