Original room for 2 days and upgraded room (at minor additional cost) was excellent

Cons:

Upgraded room had a kitchen with a gas stove but the gas stove had no gas! Also upgraded room had an excellent shower stall but most of the time there was no hot water.

Rustic hotel, beautiful grounds and location, rather isolated
Pros:

The beach location is beautiful--suitable for walking and surfing; families were also playing along the shore, but it's a little more rough than other beaches around Las Terrenas. The location is quiet and they have done nice landscaping on the grounds. Staff was out every day sweeping up fallen leaves and tending to the common areas. The location feels more "authentic" than some of the cookie-cutter hotels run by chains.
The staff members were all friendly and tried to accommodate guests who spoke a variety of languages. (We met folks from Finland, Norway, Switzerland, Argentina, Spain, Peru, and the US.) The bed was comfortable and bedrooms were air conditioned. There is a small market (Mini Mercado Coson) about a block up the street, where we purchased beer and rented a buggy.
There are several areas with chaise lounges or tables and chairs so that small groups can sit outside in the shade. Servers from the bar are attentive, but not bothersome. On Sundays, it seems as if local residents may come to enjoy the beach/pool/grounds and bar/restaurant area. It was pleasant to see families and kids playing.
Although the beaches and roadsides are littered with all kinds of trash and plastic, we were pleased to learn that Las Terrenas now has garbage pick-up and hopefully there's a trend toward restoring/maintaining the natural beauty.

Cons:

The restaurant is currently under construction, so service was provided in what probably was the hotel lobby. The breakfast was tasty, but the menu was very limited; between 2pm and 6pm only pizza was available; dinner was served 6pm-10pm, also with a limited menu. We were told the restaurant should be opening in a couple months. (Also met some people who had come from a distant hotel and were disappointed to find the restaurant closed; they have been wintering in Las Terrenas for 10 years and loved Restaurante Coson.) There is another restaurant (Restaurante Luis) across the street from Casa Coson and two accessible from the beach (one in each direction). We did not eat in either of the beach establishments, but R Luis had a reasonable menu. (Nearby Playa Bonita is much better developed and has more options for eating.)
We should have recalled this from previous stays in the Caribbean, but it's a bit unpleasant to have to put toilet paper into a waste basket. This was true in all establishments, not just our hotel.
Showers were the biggest problem--one of them was hand-held, but could not be used when mounted because it drooped and sprayed the wall; therefore, a person was forced to hold the shower head in one hand and try to wash with the other. In the second bathroom, there was a dual set-up--an overhead "rain" shower as well as a hand-held shower head--but the fitting required to select one or the other was missing; therefore, a small amount of water dribbled from both places at once. Our bungalow had a kitchen, so I ended up washing my hair under the faucet in the sink. Hot water was also in limited supply, so we tried to be very quick!
Ask about the room before you book it--we had a 3-bedroom, 2-bath bungalow, but it would not have been suitable for all families because one bedroom/bath was only accessible from the porch, requiring guests to go outside en route between the rooms. The kitchen was also accessed from the porch.

Das Personal beim Frühstück ist besonders unfreundlich wenn man nicht spanisch spricht.
Das Frühstück an sich ist eher mau.
Das Personal am Abend ist auch besonders unmotiviert, man kann bestellen was man will - als Beilage bekommt man immer nur Pommes Frittes.
Die Speisekarte ist sehr klein und vieles davon gibt es gar nicht. Die bunte Speisekarte, die hier in verschiedenen Rezensionen herumgeistert haben wir nicht finden können.
Detto die Weinkarte. Die Auswahl an weiß, rose und rotweinen ist eigentlich recht beachtlich - in der Realität gibt es aber max 1-2 verschiedene je Farbe
Leider gab es Bauarbeiten während unseres Aufenthaltes, von dem wir im Vorfeld natürlich nicht informiert wurden.
Die Rechnung aufs Zimmer schreiben geht gar nicht - man hat uns um 22:00 aus dem Zimmer geklopft um noch zu zahlen - scheinbar aus Angst das wir klammheimlich nachts abreisen und die Rechnung nicht zahlen.
Die ~30% Märchensteuer machen das Essen doch recht teuer - aber das ist natürlich überall so.
In Summe hätten wir uns dann aber auch ein schönes All-In leisten können
