Great place to stay inside the medieval city; would not recommend the restaurant though
Pros:

The hotel was wonderful although while the staff was not unfriendly, they were not overly warm. The location is great and the rooms were stunning.

Cons:

I told the waiter I was lactose intolerant but could handle butter but no creamy sauces. He assured me I could eat the Signature Menu. However many of the dishes did have a dairy sauce and the dessert came with ice cream. When he came with the cheese tray I asked for 2 blue cheeses since those are low in lactose. He added a third slice, clearly not understanding lactose intolerance

Tout simplement parfait !
Pros:

La beauté de l’hôtel en lui-même dans un lieu magnifique, le personnel, la chambre superbe et très grande, la petite note sur le lit à l’arrivée entourée de pétales, les produits de soins de qualité, tout ;) !

It’s a beautiful hotel in a beautiful location. It felt very special to stay there!

The hotel is beautiful and in a spectacular location. We loved it!

Cons:

Our only issue was the lack of a light blocking curtain (two of our windows faced the cathedral). Since the area is lit at night, the light shone through the drapes and I needed to wear a sleep mask to make it dark enough to sleep.

Pros:

L’emplacement exceptionnel, l’ambiance historique, le jardin, la chambre spacieuse donnant sur la basilique, le restaurant tant le soir que pour le petit-déjeuner , que ce soit pour la qualité des repas que pour le service.

Cons:

Le manque d’implication du personnel de la réception très en dessous de ce qu'on peut attendre dans un hôtel 5*, à l’arrivée, pas de service de bagage, la réceptionniste nous invitant à monter notre valise dans la chambre et, lors du départ, réceptionniste complètement débordée ne sachant pas gérer l’ordre d’arrivée des clients, s’occupant en priorité de ceux qui s'imposent le plus agressivement.
Le manque de professionnalisme du barman qui, après nous avoir dit d'aller dans le jardin où il viendrait prendre notre commande, n’est jamais venu, et nous avons dû revenir au bar pour enfin pouvoir commander.
Quant à la chambre, un des distributeurs de produits de toilette était quasi vide mais n’a pas été remis à niveau malgré un passage de la femme de chambre vers 20h. La plomberie était, quant à elle, paresseuse, notamment la chasse d'eau mais aussi les bondes du lavabo et de la douche qu'il fallait lever manuellement pour évacuer l’eau.

Excellent worth every cent.
Pros:

Everything. A beautiful old building, helpful staff, comfortable bed, lovely view from the room. Valet service to and from parking.
