Brilliant!
Pros:

The accommodation, the service, the staff, the ambience was all superb. So indeed was the food. I am a Coeliac and there were very good GF options for both Dinner and Breakfast which is not always the case so very much appreciated.
One small mention should be made regarding the Dinner Menu.
For a very famous Scottish hotel, I was surprised to see no quintessentially 'Scottish' dishes on the Dinner Menu. It may have been just on that day, but although the food we enjoyed was superbly cooked, it was very International and there was nothing other than Strathdon Blue to tie the food to the Highlands - and Blue Cheese is not universally appreciated. A Scottish dessert, a soup, a main course - all strangely lacking. Not even smoked salmon. Haggis was mentioned in the bar snacks but personally I felt that the Hotel let's itself down by not offering Scottish options. Perhaps next time?

I am already planning our next visit.
Pros:

The dinner was excellent. Limited options but the quality was superb.
The Junior suit on the ground floor was a fantastic size especially with a dog, patio doors straight onto the lawn and river.
Big round table and chairs to have room service breakfast at.
Bath and separate shower were great.

Cons:

The only downside, and it's very minor, but the room is supplied with a cafetière, but no ground coffee to use it with. Just the usual instant coffee sachets and tea bags. Possibly we could have asked at reception for some, but we brought our own cause I like my coffee!
The bar was part of the restaurant so we were not allowed to bring our dog in, but there is a fantastic lounge which feels like you're in a medieval castle hall that we could take our drinks and dog into.

Pros:

Beautiful house on the river, with lovely views.
Very friendly, helpful staff. The choice of non meat/ fish options at breakfast and dinner. Even vegan wine on the wine list! Our evening meal was one of the best meals we've had in a long while. Fresh, interesting and well presented. Warm and cosy decor. Easy to find and park. The dog bed in our room was thoughtful. We would recommend this hotel in a heartbeat.

Cons:

Personally, I didn't feel the quality of the mattress and pillows matched the other qualities of the hotel.
