A day to discover the "lower Parma area", the area where the presence of the Po river and the lowland fog influence the seasoning of the king of cured meats: the Culatello. During the tour we will visit an ancient Renaissance castle, transformed into the seat of taste par excellence by a Michelin-starred chef.

From the visit of some rooms rich in furniture and elegant furnishings, you will go to the vegetable garden, to the suggestive underground cellars, where the seasoning of thousands of culatelli takes place, many of which are reserved for V.I.P. and political and entertainment figures. From the museum dedicated to the pig, where you will learn the history of breeding and production, you will go to the kitchens, for a private lesson, "with a rolling pin" to learn the art of the typical fresh Emilian pasta. Following tasting and lunch.

  • 1

Private guided tour of the Antica Corte Pallavicina in Polesine Parmense, a historic residence on the Po, built in the early 1400s on a pre-existing fort, by the Marquis Pallavicino di Polesine. This is the place that Michelin-starred chef Massimo Spigaroli has transformed into the realm of beauty and taste. You will visit the ancient Castle and the farm, where animals of ancient breeds, such as the "Nero di Parma" pig, geese and peacocks enliven the farmyard, walking in the garden. Afterwards you will visit the ancient cellars where thousands of precious culatelli, wines and Parmigiano-Reggiano mature. The tour also includes the entrance to the Culatello and Masalén Museum, an interesting thematic route between audio guides, panels and places of taste, dedicated to the symbol of the territory's gastronomic richness par excellence. At the end private cooking lesson to learn the secrets of the "rolling pin" and from homemade pasta. A rich tasting of cold cuts and cheeses, as well as of the prepared meal, will conclude an unforgettable Made in Italy culinary experience.
