But first, we meet contemporary Cambodia. 8:30 AM - Local artisans demonstrate traditional palm cake making using techniques passed down through generations. You'll smell caramelizing sap before seeing the process—sweet, smoky aromas as they stir massive woks over wood fires. Timing determines everything: too early lacks sweetness, too late crystallizes wrong. This supports local livelihoods directly.
