This itinerary offers a day of discovery between the Adriatic coast and the Apulian hinterland, combining history, nature, food and wine and crafts. It starts from Polignano a Mare, famous for its cliffs and sea caves, to continue towards Monopoli, where you explore the historic center with the Cathedral of the Madonna della Madia and the Castle of Charles V. After a walk along the ancient port, the tour continues to the Egnazia Excavations, a Roman archaeological site, and the Lama d'Antico rock park, characterized by caves and settlements. In Speziale, a picnic stop among the olive trees offers local products at km 0. Continue towards Cisternino and Locorotondo, two of the most fascinating villages in the Itria Valley. After a visit to the Salumificio Santoro, we cross the Selva di Fasano, and then return to Polignano a Mare for a cooking class, learning how to prepare orecchiette, focaccia and almond cakes, the perfect end to a day immersed in Apulian culture.

The tour starts and ends in Polignano a Mare, famous for its cliffs and sea caves. The return to Polignano a Mare will reserve an engaging and authentic culinary experience: a cooking class dedicated to the preparation of some of the most iconic dishes of Apulian cuisine.
The tour continues towards Alberobello, famous for its trulli, traditional buildings with conical roofs. The UNESCO-listed Old Town offers a unique atmosphere with picturesque streets and local craft shops.
Once in Locorotondo, one of the most beautiful villages in Italy, participants will explore the historic center, characterized by white houses and flowered balconies, with a walk through the narrow streets that offer a panoramic view of the valley.
On the way back, the tour includes a stop at the famous Salumificio Santoro, known for the artisan production of high-quality cold cuts. Participants will visit the delicatessen to discover traditional methods of aging and taste some of the typical products. After this stage, the route crosses the Selva di Fasano, a suggestive hilly area rich in vegetation and characterized by breathtaking views that range from the Valle d’Itria to the sea.
