During this workshop we'll come into contact with an Umbrian tradition: butchery. That of the pork butcher is a very ancient profession, and Umbria, in particular, has managed to make it a real culinary art renowned since Roman times. Today our chef will talk about the anatomy of the pig, the different types of cuts and he will teach us all the secrets of this culinary tradition: from the basic techniques to the processing of the meat, up to the salting and maturing of the meat, and the making of sausages . At the end, we will enjoy a well-deserved lunch with the results of our work and other typical Umbrian products!
The visit of Assisi with a private guide will give you the chance to have a more complete approach to Assisi's and St. Francis's history, and the artistic, architectural and religious treasures of the city. You'll visit the main monuments and churches, walking through its enchanting alleys until reaching the Basilica of San Francesco, where the remains of the Saint rest.

What to expect

That of the norcino, is an ancient craft, and Umbria, in particular, has managed to make it a real culinary art renowned since Roman times. We will have a guided visit to a prestigious farm near Assisi, and there we will learn the secrets of this culinary tradition: the anatomy of the pig, the basic techniques of cutting the pig, processing of meat up to the production of sausages, preservation, salting, and aging of meat. At the end of the lab, we will have a well-deserved lunch with the results of our work accompanied by other Umbrian typical products!
After lunch, we will reach Assisi, Franciscan place par excellence not only in Umbria and Italy, but all over the world. We will meet our private guide who will take us on an interesting guided tour of this wonderful ancient village, to discover the history of Saint Francis while admiring the beauty of the numerous monuments, churches, and lovely alleys of Assisi: Piazza del Comune, Basilica di Santa Chiara, and many others. We will then reach the beautiful Basilica of San Francesco, where the remains of the Saint rest, and we will have the chance to visit it. Audioguide included.
