We will leave by private vehicle, heading to the town of Jabugo, nestled in the Huelva mountain range, among green landscapes and ancient forests of holm oaks and cork oaks. A small town that has achieved world fame thanks to its incomparable Iberian acorn-fed ham. Upon entering Jabugo, it is impossible not to feel enveloped by an intoxicating and unique aroma: the sweet and deep smell of curing Iberian ham. The streets emanate history and tradition, and this place has been, for centuries, the epicenter of the production of what many consider the best ham in the world.
Visiting the wineries is a true immersion in this universe. First of all, we will visit the pastures, to see where the Iberian pigs graze and raise. These animals, purebred and black-skinned, roam freely through the pastures, feeding on acorns during the montanera, in a ritual that has remained unchanged over time.
Later, we will visit the centuries-old cellars, where time seems to have stopped, the pieces of ham hang in perfect harmony, slowly curing under the expert supervision of the master ham makers. The walls, silent witnesses of years of tradition, protect the reddish gold of Jabugo. The tour ends with a tasting. And it is at that moment, when the first cut of ham touches the palate, that all the magic of Jabugo is understood. The explosion of flavors, rich and complex, speak of the land, the tradition and the care with which this delicacy has been created.
Our first stop will be the Cathedral of Seville and La Giralda, the largest Gothic cathedral in the world. We will climb the Giralda, the old minaret that now functions as a bell tower, to get panoramic views of the entire city. It was named a World Heritage Site by UNESCO in 1987. As a curiosity, the tomb of Christopher Columbus, the discoverer of America, is located here.
We will also visit the famous Patio de los Naranjos, a sign of the old mosque that was located in that place, but which is currently integrated with the Christian structure of the rest of the cathedral.
We will continue with the Real Alcázar, a few steps from the Cathedral, an impressive Mudejar palace that has been home to kings throughout the centuries. Its gardens and patios are an oasis in the heart of the city. We will visit the Mudéjar Palace, built in the 14th century under the order of King Pedro I, proof of the mix of cultures that passed through Seville, the Gothic Palace, built under the order of King Alfonso and where the tapestries room is located, dating from the 18th century, and the great Hall, the Patio del yeso: One of the best patios of this palace, built in the 12th century, and on all the walls you can see the plasterwork in the Andalusian Arab (Mudejar) style, and finally we will tour the Gardens full of flowers, fountains and animals.
Finally we will stop at the Torre del Oro next to the Guadalquivir. This defensive tower, which formerly protected Seville from invasions, is one of the city's emblems. From here, you can enjoy a pleasant walk along the Guadalquivir River. Return to the hotel, after a full day exploring Seville.
