This is a practical cooking class focused on making five different sauces, designed to be made in a market environment. The activity begins with a guided tour of the market, where participants select fresh and seasonal ingredients, learning to recognize their quality, origin and culinary use.
Later, in the workspace, a chef or facilitator guides the participants step by step in preparing the sauces, sharing basic techniques, flavor combinations and context on the Mexican culinary traditions associated with each recipe.
The activity concludes with a tasting of the prepared sauces, encouraging conversation, exchange of learning and appreciation of the work done by the participants.

We will meet at Etnofood, the Cooking School and where we learn to teach cooking classes and can occupy the kitchens, the space is inside the place called Etnofood, at Xicotencatl 609, Col. Centro, Oaxaca de Juárez, Oaxaca.
