Oaxacan Chocolate Tablet Workshop

Immerse yourself in an authentic experience around traditional Oaxacan cocoa and chocolate, guided by a native Oaxaca chocolatier with deep ancestral knowledge. In this practical workshop you will learn about the cultural origin of cocoa, its historical relevance in Mexico and the artisan process that transforms the bean into chocolate, as it has been done for generations.

Throughout the experience, you will work directly with cocoa beans: you will learn to roast, hull, grind and refine cocoa, while discovering its unique aromas, textures and flavors. The workshop places special emphasis on Oaxacan traditions and the cultural value of chocolate as food, ritual and living heritage.

To close the experience, you will make your own Oaxacan chocolate bar, molded and packed by you, which you can take with you as a memory of genuine, sensory and deeply connected learning with the earth and its people.

We will meet you at the chocolate shop of Etnofood, our workshop in Downtown Oaxaca, located at Xicotencatl 609, Col. Downtown 6 blocks from the city center.

What to expect

During this activity, participants will know the cocoa beans, learning to identify them and understanding their origin, characteristics and the importance they have in the manufacture of traditional chocolate. The guide will explain how the quality of the grain directly influences the flavor and aroma of the final chocolate.

Subsequently, attendees will participate in the roasting of the cocoa beans and their cleaning, learning in a practical way each of these processes and understanding how these stages develop the characteristic flavors of cocoa.

Finally, the participants will mold the chocolate, place it in bars and pack it in their own boxes, taking a bar of Oaxacan chocolate made by themselves as a closing of the experience.
