Self-drive to one of Australia's oldest wineries Tahbilk. Established in 1860, Tahbilk is one of the most beautiful and historic family-owned wineries located approximately 75-miles (120km) north of Melbourne. Begin your day with a guided tour of the winery encompassing both the old and modern technologies. There is no better winery to experience the history of winemaking. The next stop is a wine-blending workshop, the motto being that "the whole is greater than the sum of its parts". You'll create a blend that is truly yours, bottled and labelled to take home. After all your hard work, you will no doubt, be hungry for lunch! The Wetlands View Restaurant is an ideal setting to relax. Enjoy a two-course lunch matched to current and aged wines. Finish the day with an ecology tour the Tahbilk Wetlands, focusing on the restoration work that has helped save endangered species, which, with a good eye you might be lucky to spot.
