Hello, I'm Giorgio — welcome to our family's historic vinegar cellar.

Together with my father Mario, President of the "Antiche Acetaie" Producers' Consortium and President of the ABTM D.O.P. Expert Tasters Association, I share a passion for ABTM in all its facets, from production to revealing its secrets.

In the cellar you will see numerous "batteria", including the one started by my great-grandfather Mario in 1905 which is still in production today.
We will also talk about other lines of barrels important to my family, such as those started by my grandfather Giorgio in the early 1950s to mark the birth of his children.

It is precisely because of our deep passion for Traditional Balsamic Vinegar of Modena that we decided to open our home and welcome you into this magical world.

What to expect

Welcome to Acetaia Gambigliani Zoccoli one of the few vinegar houses still producing ONLY and EXCLUSIVELY ABTM D.O.P.
We offer a guided visit to the Antique Acetaia followed by a generous tasting of our product served as a proper lunch.

You will be welcomed by Mario and Giorgio Gambigliani Zoccoli who will present the history of the family, the farm, ABTM D.O.P., and its production techniques. You will continue with a tour of the Acetaia located in the villa attic where some secrets about tasting and the culinary use of Traditional Balsamic Vinegar of Modena D.O.P. (or ABTM) will be revealed.

After that you will be ready for a rich tasting of ABTM paired with gastronomic products:
• Three maturities of Parmigiano Reggiano 18 months, 24 months, and over 30 months
• Two types of ricotta cow and sheep
• Two vegetable omelette varieties
• Three types of baked gnocco
• Eight different cured meats e.g., Prosciutto Crudo di Parma D.O.P.; Mortadella Bologna; salami; ciccioli; coppa; pancetta; coppa di testa; lardo
• Risotto alla parmigiana
