You will be supervised by an experienced trainer with extensive teaching experience and expertise in the history of gastronomy. You will not only learn the "little tips" from the great pastry chefs which will allow you to easily reproduce these desserts at home, but you will also live an immersive experience in the History of French pastry and you will discover numerous cultural anecdotes about the culinary arts .
A small group of 8 people maximum which allows everyone to train and the trainer to give you personalized advice. All in a warm Parisian apartment, where you will feel at home and which will immerse you in an atmosphere of relaxation and conviviality.

What to expect

You will make different desserts using choux pastry: chocolate éclairs, Paris-Brest, petit choux, as well as the creams that accompany them: pâtissière, mousseline, praline, chantilly, you will learn to make icings and crackers and will make the montages of these pastries.
You will discover the history of Paris-Brest and many other cultural anecdotes around these desserts. We will discuss the history of French pastry and the major trends that have spanned the ages. A workshop that combines practice and pastry techniques with the cultural dimension of the culinary arts.
