Osaka’s okonomiyaki gets a lot of love, but Hiroshima’s version does things its own way. Instead of tossing everything together, Hiroshima layers batter, cabbage, bean sprouts, noodles, meat or seafood, and a fried egg, cooking each piece carefully. It’s bigger, more detailed, and usually made right in front of you by chefs who really know their craft.
