The Pakerisan River Valley to the north east of Ubud was listed as a Cultural Heritage Area by UNESCO in 2012. This mystical river valley contains ancient ancestral sites dating back to 8th - 12th centuries. Ancient animist beliefs and influences of Hinduism and Buddhism spread from India to Bali via Javanese kingdoms. 
Chefs in Bali are called Belawa, this name comes from a Buddhist belief, namely Buddha Bhairawa.
Balinese cooking combines the balance of 8 spices from the mountains which represent the 8 directions of the wind and 2 symbols of dualism from the sea which represent the middle. 
This sauce is called complete sauce “Basa Gede” and gives a unique taste to Balinese food
