At Riad Andallaspa, a 19-room riad in the heart of Marrakech's Medina, you'll learn to build a real Moroccan tagine from scratch — the spice blend, the slow layering, the technique that takes Moroccan grandmothers a lifetime to perfect. Your host will walk you through it hands-on, no shortcuts, no pre-made sauces.
But the real moment comes after: carrying your finished tagine up to the rooftop as the call to prayer echoes over the Medina and the sky turns gold, then sitting down to eat what you made while the city settles into evening below you.
This isn't a cooking demo in a hotel studio. It's a real riad, a real rooftop, and a meal that means more because you made it yourself before watching Marrakech earn its nickname as the city the world escapes to.

We meet at Riad Andallaspa on Rue Tikhizrit. Look for the front entrance of the riad, ring the bell, and your host will be right there to welcome you to our beautiful Riad!

What to expect

You'll arrive at Riad Andallaspa, a traditional 19-room riad in the heart of Marrakech's Medina, where your host will welcome you into the kitchen with a cup of mint tea to start.
Together, you'll begin by preparing a trio of traditional Moroccan salads and warm homemade khobz bread — a relaxed, hands-on starter that eases you into Moroccan cooking technique before the main event.
Next, your host will guide you step-by-step through building a traditional Moroccan tagine from scratch: blending the spices (ginger, saffron, preserved lemon, olives), layering the ingredients, and learning the slow-cooking method passed down through generations. This is fully hands-on — you'll do the cooking yourself, not just watch a demonstration.
While the tagine simmers, you'll head up to the riad's rooftop as the sun begins to set over the Medina. When the tagine is ready, it's carried up and served there, along with a simple dessert of fresh orange and cinnamon, so you finish the evening eating the meal you cooked while overlooking the city at golden hour.
The experience closes with a traditional mint tea ceremony on the rooftop before you depart
