Shojin Ryori (精進料理) is a course meal of a variety of small dishes. Dishes are subject to seasonal availability and cannot be substituted.
Shojin Ryori - Staple
Steamed white rice or rice porridge.
Shojin Ryori - Soup
Miso shiru made with seaweed-based broth.
Shojin Ryori - Agedashi dōfu
Lightly fried tofu in a soy-based sauce.
Shojin Ryori - Nimono
Simmered vegetables such as daikon, carrots, taro, and pumpkin in dashi.
Shojin Ryori - Sunomono
Vinegared salads, often cucumber or wakame seaweed.
Shojin Ryori - Tsukemono
Pickled vegetables for palate cleansing.
