Make 6 pieces of nigiri sushi, including Nodoguro, then compare your sushi with one made by the chef using the same ingredients.

Discover UMAMI by making ichiban dashi from kombu and bonito flakes. You’ll also prepare Jibuni with fresh Japanese wasabi, dashimaki tamago, miso soup, and a seasonal Japanese side dish.

Nakata Cooking School is on the 2nd floor of a building a few minutes from Kanazawa Station, next to the Japanese restaurant Ajimura. Taxi: say “Nakata Ryori Gakuen (中田料理学園), next to Ajimura.” Please arrive at least 10 minutes before the start time.

What to expect

Join an authentic Japanese cooking class at Nakata Cooking School, established in Kanazawa in 1969.

First, learn about UMAMI and prepare traditional ichiban dashi using kombu and bonito flakes. Then make six pieces of nigiri sushi, including Nodoguro, and experience using an authentic Japanese sashimi knife. The chef will also make one piece using the same ingredients so you can compare the texture and flavor.

Next, prepare Jibuni, a traditional Kanazawa dish served with fresh Japanese wasabi, and work in pairs to make dashimaki tamago, a Japanese rolled omelet rich in dashi.

You will prepare five Japanese dishes in total: six pieces of nigiri sushi, Jibuni, dashimaki tamago, miso soup, and a seasonal Japanese side dish.

Once the cooking is finished, sit down together and enjoy everything you have made. A small glass of Japanese sake is served before the meal.

The class is relaxed, beginner-friendly, and limited to a maximum of eight guests. Real-time AI translation is available in multiple languages.
