In our laboratory in Modica, you’ll be guided on a sensory adventure that begins with raw cacao beans.

Get hands-on with every stage of production: select the finest cacao beans, breathe in their aromas as they develop during roasting, and discover how they slowly transform into cacao mass through traditional stone grinding.

Throughout the experience, you’ll taste cacao at its different stages, gaining a deep understanding of what makes the artisan bean-to-bar method so special.

Finally, create your own raw chocolate bar by choosing each ingredient, package it yourself, and take home an authentic reminder of your day as a chocolatier.

What to expect

Step into an artisanal chocolate laboratory in Modica, a city renowned worldwide for its chocolate-making tradition.

The experience begins with raw cacao beans. You’ll learn to recognize their aromas, origins, and quality, select the best beans, and witness the roasting process, when cacao develops intense and complex fragrances.

You’ll continue with grinding and refining, discovering how the beans turn into cacao mass and then into true artisan bean-to-bar chocolate. Along the way, you’ll taste cacao at different stages of processing, understanding the differences between artisanal methods and industrial production.

Finally, you’ll create your own personalized chocolate bar, choosing and adding ingredients to suit your taste and packaging it yourself. While waiting for the bar to set, you’ll take part in a guided tasting of all our artisan bean-to-bar chocolate lines, exploring aromatic profiles, cacao origins, and different cocoa percentages.
