Please enter the Itamae Sushi restaurant on the second floor. Staff will welcome you. Note: Due to renovations and facility upgrades, the experience venue will be relocated starting March 1 to Itamae Sushi Hanare Akasaka, just a 3-minute walk from the original location.

What to expect

This is an authentic, hands-on sushi making experience designed for visitors eager to discover the true art of Japanese sushi. Guided by an Itamae—a master sushi chef with 30 years of experience—participants will not only master essential techniques but also gain insight into the culture and craftsmanship behind each piece of sushi.

- Freshly grate real wasabi and experience its unique flavor.
- Prepare sushi rice and learn the secrets of perfect shari.
- Make hand-rolled sushi with premium nori.
- Try making and tasting uni, negitoro, hirame, kuruma-ebi, chutoro, and akami sushi.
