Awakening of the Jungle (6:00 AM): We begin our adventure early in the morning, departing from San Cristóbal de Las Casas. We will visit a local producer in Ocosingo to get an up-close look at the artisanal process and the secrets behind the iconic *Queso de Bola*—a gastronomic gem with a protected designation of origin. You will learn its history, understand its cultural significance, and, of course, delight your palate with a tasting, while also having the opportunity to purchase it directly from the artisans who craft it.
The City That Challenged Palenque: We head to one of Mexico’s most impressive, mysterious, and uncrowded Maya cities. Accompanied by our expert guide, we will spend approximately three hours exploring its ceremonial plazas, imposing temples, and stone passageways. The highlight will be the ascent to its monumental acropolis—one of the tallest pyramid structures in Mesoamerica open to the public—offering a commanding view of the entire valley as you uncover the bold history of a power that rivaled the great lords of Palenque.
Living Tradition in Ocosingo: After the archaeological visit, we will return to the picturesque town center of Ocosingo.
