What to expect

Live an authentic experience in the heart of an ancient artisan cheese dairy in Vico Equense and discover up close the cheese-making tradition of the Lattari Mountains.
You will be accompanied by Antonio, a young master cheesemaker and guardian of his family’s traditions, who will guide you through the artisan dairy workshop, sharing production processes, curiosities, and anecdotes linked to the Antico Caseificio. The visit begins with a detailed explanation of traditional cheese-making techniques, to understand how, for centuries, milk has been transformed into genuine cheeses through rituals unchanged over time.
The heart of the experience is the Cagliata Class, where you will truly get hands-on and, guided by Antonio, create one of the oldest cheeses in history: Primosale, obtained through lactic coagulation and symbol of the origins of cheese-making art. You will then take part in the production of hand-churned butter, still made today using wooden paddles and ancient gestures passed down from generation to generation.
The experience ends with a tasting of artisanal cheeses and local cured meats, a perfect moment to savor traditional flavors in an authentic atmosphere.
