Learning how to make fresh pasta is like stepping into the past as the methods and techniques haven’t changed much over time. But to do so in a traditional Bolognese pasta shop guided by two experienced culinary artisans makes this experience even more special. We offer an immersive workshop in a fully equipped professional environment yet with an informal, warm, and lighthearted tone. What to expect

Have you always wanted to learn the art of crafting fresh pasta from scratch? You have come to the right place! Join us, Lucia and Alexandra, in our traditional Pasta Shop and we will teach you everything from mixing the dough to shaping each delicate piece by hand using techniques that have been passed down through generations. Under our expert guidance you will create beautiful pasta that is as delicious as it is authentic.

During this 3-hour workshop you will master two pasta varieties synonymous with our city of Bologna: tagliatelle and the iconic tortelloni stuffed with creamy ricotta and parmigiano.

Each participant works from their own dedicated station equipped with a wooden board and rolling pin.
You’ll learn how to mix the perfect dough and how to skillfully roll it into a thin sheet, entirely by hand.
Next you prepare the cheese filling after which you cut and shape the tortelloni.
Once the ‘sfoglia’ has been allowed to slightly dry, we cut it into tagliatelle with a knife.
Then it’s off to the kitchen where we cook your creations and sit down to taste them accompanied by a nice glass of wine.
