Master sushi-making in this immersive 4-day course. Perfect for travelers, food lovers, and chefs, this program offers practical training in traditional skills: rice, knife handling, fish cutting, and preparing nigiri, gunkan, and maki. Each day starts with hygiene and workstation prep.

Learn from experienced chefs, gaining insights into Japanese seasonings, sake, and dashi. You'll get individual feedback and learn to share skills. Participants receive a Kappodo uniform, online access for continued learning, and a certificate. Optional one-day add-on lessons are available.

This course has a flexible start date. Your 4-day journey begins on a day you choose. Book your first day, and we'll help you schedule the remaining three. Select your dates within two weeks, avoiding Mondays and Thursdays. After your reservation, we'll contact you to coordinate your schedule.

What to expect

Ready to take your passion for sushi to the next level? This 4-day intensive "Sushi Coach OJT Program" in Tokyo is designed for aspiring sushi instructors, culinary professionals, and travelers who are seriously considering a career in sushi.

In this immersive, hands-on training, you’ll learn everything from hygiene protocols and rice preparation to knife skills, fish slicing, and the proper techniques for making nigiri, gunkan, and sushi rolls. You’ll also gain foundational knowledge of sake, dashi, seasonings, and even get a taste of the sushi market culture.

At the end of the course, you'll take a final skills assessment. If successful, you’ll be awarded the Kappodo Certified Sushi Instructor title. Participants who do not pass will still receive the Kappodo Sushi Advisor designation. A certificate of completion is included.

For those who need more practice, optional additional training is available for an extra fee. If necessary, the Japan Kappo Institute will provide training to sushi chefs and advice on opening a restaurant.This is a perfect trial before joining a long-term culinary academy—no prior experience required!
