You’ll start by learning the art of fresh pasta-making, using simple, high-quality ingredients like farm-fresh eggs and locally milled flour. Roll up your sleeves and dive into the process as you mix, knead, and shape the dough by hand, crafting classic shapes like pappardelle, ravioli and tortelli. You’ll also learn how to make traditional sauces that pair perfectly with your pasta — from velvety tomato sauces to rich pesto to butter and sage.

Next, it’s time for homemade Italian gelato. Discover the secrets behind gelato’s smooth, creamy texture and how it differs from ice cream. Using fresh, seasonal ingredients like fruits from the garden, rich cocoa, hazelnut and pistacchio paste, you’ll make your own batch of gelato under the guidance of your instructor.
