My name is Sonia and since childhood I have had a great passion for traditional Oaxacan cuisine, and not only because I was born in this beautiful land, but also because I am so proud to have learned from the best cooks in the region.

My mother always told me that there is no cooking in clay pots and charcoal, since then I have followed her advice.

All dishes will be easy to replicate at home, a digital recipe will be provided.

I have attended diplomas in pastries and I make cakes with organic eggs and fresh butter.

I would love to welcome you to my house and share the knowledge I have gained over all these years.

Classes are available in English and Spanish. We offer classes for vegans and vegetarians as long as they let me know in advance.

My son Baldo will meet you the day of the class in front of the entrance Temple of Santo Domingo de Guzman, you will be notified in the morning of that day how the dress will go to make it easier to identify him. Once we meet him, we will head to the place of the class which is 25 minutes away, after the class we will take you back to the meeting point.

What to expect

Welcome!

The first step will be to show you the ingredients you can find in Oaxacan homes, one of the advantages of our experience is that we have a garden with organic herbs and chilies. We make cheese and fresh cheese every day.

My son Baldo will share his knowledge about mezcal, a tasting in which you can taste as much as you like, as well as fresh water, soft drinks and juices. Botanas? Of course you do, but you have to do it Oaxacan style, which means worms, chicatanas and chapulines.

Have you heard anything about metate and how tortillas are made by hand? In addition to tortillas, we will make teels, jams and trifles. We will make different sauces using seasonal ingredients all cooked over comal, firewood and coal coals. The mole is an emblem of Oaxacan cuisine and we will cook one of the 7 moles using the metate. You can’t leave without tasting dark mole, water chocolate, pot coffee, snow and a rich cake.

Everyone will participate in the processes, cutting, grinding, making sauces and of course eating, remember when you visit a house in Oaxaca you have to come on an empty stomach.
