We are more than a Traditional Restaurant, but a refined Puglia Heritage Restaurant, a place where people can learn hands-on how a historical dish comes to life. The origins of a dish go beyond the recipe. They encompass the history of a region.
Over the years, many of our customers have rediscovered flavors long lost in their memory. Forgotten tastes that have touched their hearts, bringing back vivid memories.
Currently, our Maestro di cucina is Giorgio Grassi. He learned everything from Rosalba De Carlo, his mother, a great expert in Puglia’s culinary culture. She belongs to the noble baronial family Andriani De Vito of Corigliano d’Otranto. Being also in close contact with the peasants of her village, Rosalba has deep knowledge of both the rich and the humble versions of the same culinary tradition. For this reason, a conference with the UNESCO Patronage chose her as a Case Study in 2010.
Rosalba is a great treasure to our Restaurant, but above all a precious jewel of our family.

Orecchiette cu li pummitori scattariciati

Hand made Orecchiette Traditional Pasta with fresh tomatoes, oregano and pecorino cheese, cooked in a pan with the student. It's a local recipe!

Cocule te marangiana allu sucu

Polpette of eggplants/aubergines prepared with the student and cooked in a pan with tomato sauce. ("meatballs without meat", with pulp of eggplant).

Dessert

Lo Spumone Salentino

Traditional Ice Cream from Lecce: hazelnut and chocolate flavors, stuffed with salted chocolate in pieces. Please, eat it with a fork and not a spoon!

What's Included

The entire restaurant is available to guests: from the preparation at the work table for handmade pasta, in the kitchen at the stove, up to lunch.
For making pasta: a long oak and iron workbench. Into the kitchen you’re embraced by the vibrant colors of Salento. The space is also equipped with steel workbenches and elegant marble countertops.
The menu also includes drinks and dessert: Leccese Spumone ice cream with hazelnuts and chocolate flavors, stuffed with salted chocolate soft chunks.
The starvaulted rooms feature classic crystal chandeliers and air conditioning. Also have an old record player where you can listen to LPs by famous Italian singers like Mina, Celentano, and Battisti.
The dishes are paired with a selected bottle of Salento wine, chosen by Giorgio Grassi according to your preferences. With dessert, at the end of lunch, we’ll serve coffee and limoncello.
Our Traditional Cooking Class ends with a lunch that you will have prepared almost entirely with your own hands. Giorgio and Rosalba control your learning and activities… food is no joke!
At the work counter in the dining room, you’ll learn how to make hand made fresh pasta. In the kitchen, we’ll cook traditional dishes with ancient flavors, typical of Puglia’s culinary heritage.
Private transportation
The tomato sauce needed for some dishes can't be made during the class, it takes too long to cook!

Alle due corti Restaurant is the place where our traditional cooking class in Lecce and the unforgettable lunch included take place. The door is in Corte dei Giugni 1, but you can also "enter from the window", in Via Prato 42, using a large window that looks out over the pretty Prato Arch Square.

What to expect

Alle due corti Restaurant opens its doors to those wanting to experience an authentic and intense Traditional Cooking Class in Lecce: cooking lessons in Lecce enriched by Alle due corti's style of culture, tradition, and familial warmth.
Giorgio Grassi is our Maestro di Cucina, and his mother Rosalba De Carlo is our treasured gem, renowned worldwide for her deep knowledge of Traditional recipes from Puglia and Lecce in particular. Rosalba often takes part in the lessons… she’s not exactly the new kid on the block, but she still has so much to teach!

The entire experience takes place inside our Restaurant, a 14th century building with star vaults.
The cooking class includes: hand made pasta session (orecchiette e maccheroni) cooking experience at the stove and the lunch (two dishes prepared during the class, paired with fine Salento wine, a traditional dessert, usually Spumone, coffee or limoncello.) If you wish, you can take away the remaining food, for a light dinner at the hotel
To ensure the best possible Experience, it is essential to gather all necessary information about the guests in advance, especially regarding intolerance, allergies, or specific ingredient restrictions.

  • The Restaurant allows access to guests with wheelchairs, but not for the Traditional Cooking Classes: unfortunately in the kitchen it is not possible for structural reasons.
