    The experience begins with a visit to Rancho Calicanto, a space dedicated to regenerative agriculture and natural land care. Here visitors will learn how different organic fertilizers used in agave cultivation are made, such as bokashi, biols and composts, which help strengthen the soil and improve plant health in a sustainable way. This introduction will explain the importance of organic management in agave fields and how these natural inputs contribute to the growth of stronger and more balanced plants. This first stop allows us to understand how the process of mezcal begins from the land, learning about agricultural practices that protect the ecosystem and guarantee the quality of the agave before its transformation into mezcal

    San Pablo Villa de Mitla

    visit to agave plantations grown under agroecological practices, where they can learn up close how magueys develop and what care they require during their growth. During the tour the life cycle of the agave will be explained and the importance of working the earth naturally, without the use of pesticides or chemicals, respecting the times of the plant. We will also visit a landscape where wild magueys endemic to the region grow, which will allow us to observe these species in their natural environment and understand the richness of agaves that exists in Oaxaca

    In Casa Espadín you will know the artisanal process of ancestral mezcal, from the selection of agave to its distillation, and you will have the opportunity to taste its varieties of the best quality, enjoying the authentic flavors that represent the tradition and culture of Oaxaca.

    We will visit an ancestral palenque of the elaboration of the mezcal, know all the stages of the process that Master Fernando uses for the elaboration of this drink. At the end of this part we begin with the tasting of the mezcals that are made under this technique.

    At the end of the tour we will return to the city, leaving you a few blocks from the Zocalo. If you prefer to get off somewhere else along the route, tell your guide and we will gladly make it possible.
